
Some people avoid grilled foods because that type of high-heat cooking can cause the formation of heterocyclic amines that have been known to cause cancer. Recently a researcher found adding
rosemary extract to hamburger reduced the formation of the heterocyclic amines. The effect of the rosemary may be due to the combination of antioxidants naturally found in the plants.
Rosemary extract can be added to the surface of meats, or included is an ingredient in a marinade to be used before grilling.
